Yam/Sweet Potato Casserole

Ingredients

  • 5 lbs. of yams or sweet potatoes
  • 1 1/2 cubes of unsalted butter
  • 1 1/2 teaspoons of Kosher salt
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground ginger
  • 1/2 cup packed brown sugar
  • Jumbo marshmallows, cut in half short wise

Serves about 10 people

Directions

  1. Wash yams and put them in a large pot.  Cover with water and cook them slowly (try not to let them boil) until they are fork tender – about 30-45 minutes.  Cool so you can handle them.  Peel and mash them in a large bowl.
  2. Melt the butter and add to potatoes along with brown sugar and spices.  Mix well.
  3. Place in a baking dish, cover with plastic wrap and store in the refrigerator for up to 1 week until you are ready to bake and serve it.

To Bake

  1. Remove plastic wrap and place in a 350 degrees(F) oven for 40 minutes.
  2. Pull dish out of the oven, place marshmallows on top of yam mixture with the sticky side down, place back into the oven for 5-10 minutes to allow the marshmallows to brown, careful not to burn the marshmallows.  Serve hot.  Enjoy!
