Festive and Fresh Winter Salad

Colorful salad with cranberries on top

This salad displays the beautiful color of traditional winter fruits, and pairs them with this deliciously sweet dressing.  Everyone will love this green salad!

Ingredients

  • 1 bag baby lettuce
  • 4 Persian cucumbers, washed and sliced
  • 2 red pears, cored and diced
  • 1 pint fresh blueberries, rinsed and drained
  • 1/2 – 1 cup fresh pomegranate seeds
  • 1/2 – 1 cup honey roasted sliced almonds
  • Optional: diced avocado

Chinese Chicken Salad Dressing Ingredients

  • 1/4 cup rice vinegar
  • 1/4 cup water
  • 1/2 cup sugar
  • 1 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 2/3 cup vegetable oil

Directions

  1. Make the salad dressing a week in advance by simmering the rice vinegar, sugar, and salt in a small pot over medium heat until all are dissolved.  Add pepper and vegetable oil and let cool.  Store in a sealed container in the refrigerator until ready to serve.
  2. When ready to serve, place all salad ingredients in a bowl and toss with your prepared salad dressing.
