Ingredients
- 5 lbs. of yams or sweet potatoes
- 1 1/2 cubes of unsalted butter
- 1 1/2 teaspoons of Kosher salt
- 2 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon ground ginger
- 1/2 cup packed brown sugar
- Jumbo marshmallows, cut in half short wise
Serves about 10 people
Directions
- Wash yams and put them in a large pot. Cover with water and cook them slowly (try not to let them boil) until they are fork tender – about 30-45 minutes. Cool so you can handle them. Peel and mash them in a large bowl.
- Melt the butter and add to potatoes along with brown sugar and spices. Mix well.
- Place in a baking dish, cover with plastic wrap and store in the refrigerator for up to 1 week until you are ready to bake and serve it.
To Bake
- Remove plastic wrap and place in a 350 degrees(F) oven for 40 minutes.
- Pull dish out of the oven, place marshmallows on top of yam mixture with the sticky side down, place back into the oven for 5-10 minutes to allow the marshmallows to brown, careful not to burn the marshmallows. Serve hot. Enjoy!
