Thanksgiving is a Chef’s Super Bowl; we love it. For me, I like having the table set at least a day in advance, which is something my grandma used to do, and it’s one element I can look at and know is done, while handling a flurry of finishing cooking all my dishes. Preparing the house, from taking out the trash to having an empty dishwasher to restocking the toilet paper, makes the space ready for hosting. I like doing a potluck Thanksgiving where I personally assign dishes to people who I know will be successful at those specific menu items. Personally, I do the turkey, and make sure I have enough tupperware prepared for people to take some with them. Make more turkey and less stuffing than you think you’ll eat.I get a bird that’s 30-45% more than I need because turkey leftovers are so delicious.
Thanksgiving Recipe: Meg’s Stuffing Fritters
Ingredients:
- 1 loaf your favorite bread
- 1 cup chicken stock
- 1 tbsp chopped celery
- 1 tbsp chopped onion
- 1 tbsp minced garlic
- 1 tbsp butter
Instructions:
- Cut bread into small pieces and toast.
- Melt butter in a pan over medium heat, add garlic, onion and celery and cook until onion is just translucent.
- Add in chicken stock and bring to a boil.
- Add in toasted bread and stir until combined.
- Cover pan and allow to steam for a few minutes
- Cool stuffing in refrigerator
- In a separate pan, heat oil over medium-high heat
- Form your stuffing into 1-inch balls and carefully place in hot oil.
- Fry until all sides are golden. Remove from oil and pat excess oil off on a paper towel.
- Top with, or dip in a favorite cranberry sauce and enjoy!

Redondo Beach Historic Library in Veterans Park: Made by Meg Catering has taken over operations of the beachfront event venue next to the Redondo Beach Pier. Renovations have begun with the city of Redondo Beach and Made by Meg Catering, with the windows being replaced as the first step.
