This salad displays the beautiful color of traditional winter fruits, and pairs them with this deliciously sweet dressing. Everyone will love this green salad!
Ingredients
- 1 bag baby lettuce
- 4 Persian cucumbers, washed and sliced
- 2 red pears, cored and diced
- 1 pint fresh blueberries, rinsed and drained
- 1/2 – 1 cup fresh pomegranate seeds
- 1/2 – 1 cup honey roasted sliced almonds
- Optional: diced avocado
Chinese Chicken Salad Dressing Ingredients
- 1/4 cup rice vinegar
- 1/4 cup water
- 1/2 cup sugar
- 1 tsp salt
- 1/4 tsp freshly ground black pepper
- 2/3 cup vegetable oil
Directions
- Make the salad dressing a week in advance by simmering the rice vinegar, sugar, and salt in a small pot over medium heat until all are dissolved. Add pepper and vegetable oil and let cool. Store in a sealed container in the refrigerator until ready to serve.
- When ready to serve, place all salad ingredients in a bowl and toss with your prepared salad dressing.
