Big Auntie’s Lemon Squares

Big Auntie’s Soon to be Famous Lemon Squares

Who doesn’t love lemon bars? These are super easy to make and sure to be a hit at the next book club meeting, picnic or family gathering.

Ingredients

  • 2 Cups Flour
  • 1/2 Cup Powdered Sugar
  • 2 Sticks of Butter
  • 4 Eggs, Beaten
  • 2 Cups Granulated Sugar
  • 1/3 Cup Fresh Lemon Juice
  • 1/2 Tsp Baking Powder
  • Powdered Sugar for Sprinkling on top

Directions

Preheat oven to 350.
Mix in a food processor with the plastic dough blade in place until it is coarse like sand’s texture: flour, powdered sugar and 2 sticks of cold butter, cubed. Press into a 13×9 baking dish with either clean hands or the flat part of a measuring cup.
Bake about 22 minutes.
While the delectable crust bakes, combine really well in a glass bowl: 1/4 cup of flour, beaten eggs, sugar, lemon juice and baking powder.
Let sit while the crust finishes baking.
As soon as the crust is golden brown, stir and pour the filling over the hot crust and return to the oven for about 22 minutes longer. Remove from oven, sprinkle with powdered sugar and cool before cutting with a plastic knife dipped in hot water.

Dawn didn’t officially start cooking until after she got married. She tells us in her Texas accent, “I watched the Martha Stewart Show religiously after I got married. I think I only knew how to make three or four things then. Poor Brian!”
