These mildly sweet and deliciously refreshing individual Fruit Pizzas are a fun way to celebrate any occasion. Shape them into rectangles, decorate them with red and blue fruit, and you have the perfect dessert to enjoy with family and friends this 4th of July! Happy Independence Day!

Cookie Crust
Ingredients:
1¾ cups flour
½ tsp baking soda
¼ tsp Kosher salt
1 stick unsalted butter
½ cup sugar
1 egg
1 tsp vanilla

Directions:
1. Mix flour, baking soda, and salt in large bowl. Cut softened butter into dry mixture using an electric mixer, pastry cutter, or two knives.
2. In a separate bowl, mix together sugar, egg,
and vanilla.
3. Add sugar mixture to flour mixture and stir to combine. Wrap dough in parchment paper and chill in refrigerator for at least 20 minutes and up to 5 days.
4. When ready to bake, preheat oven to 350°F. On a floured surface, roll out chilled dough until it is about ¼” thick. Cut into rectangles (or any desired shape) and bake on baking sheet for 8-15 minutes depending on size, until crusts have a slight hint of color around the edges. Let crust cool on cookie sheet for at least 10 minutes.

Pizza Frosting
Ingredients:
1 stick unsalted butter
3 cups powdered sugar
1 tsp vanilla
2 TBL heavy cream or milk
½ tsp orange zest
½ tsp Kosher salt
3oz room temperature whole fat cream cheese

Directions:
Add all ingredients except cream cheese to a bowl. Mix with electric mixer until fluffy, about 2 minutes. Scrape the sides of the bowl down with a spatula, add the cream cheese, and beat for another 2 minutes.

Assembly Instructions:
Generously spread frosting over room temperature cookie crust. Top with fruit, being careful to keep the fruit out of direct contact with the crust. Pipe decorations as desired using a piping bag or zipper bag and pastry tip. Enjoy!
