Leprechaun Lunch Recipe

Let the spirit of the Leprechaun linger this month with this delicious, healthy and festively green Macaroni & Cheese! Use your favorite pasta or try a new fun option like this one that I picked up from the Lunada Bay Market & Deli. It’s sure to be a hit!

St. Patrick’s Day Green Mac & Cheese

INGREDIENTS:
3 TBL butter
3 TBL All Purpose flour
2 cups warm milk
1 tsp salt
1 cup shredded mozzarella cheese
1 cup packed fresh spinach
2 TBL packed fresh basil leaves
1 pound pasta, cooked according to packaging instructions

DIRECTIONS:

  • Cook 1 pound pasta according to package instructions.
  • Melt butter in a 2-quart sauce pan over medium/low heat.
  • Whisk in flour, stirring for 1-2 minutes until flour is cooked.
  • Add warm milk and whisk constantly until thickened, about 2 minutes.
  • Turn heat off and stir in cheese and salt.

Place spinach and basil in blender. Add cheese sauce and blend until smooth.
