Halibut Fish Taco with Mango Avocado Salsa

What better way to celebrate Cinco De Mayo and Halibut season than by making these deliciously spicy and sweet Halibut Fish Tacos with Mango Avocado Salsa! Pick up some of this delicious fish at The Great American Seafood Market in the Golden Cove Shopping Center.

HALIBUT TACOS

Ingredients:

  • 1 lb fresh Halibut or other white fish
  • ½ tsp ground cardamom
  • ½ tsp ground coriander
  • ½ tsp cumin
  • ½ tsp red pepper flakes
  • ¼ tsp garlic powder
  • ¼ tsp paprika
  • ¼ tsp dried rosemary
  • ½ tsp Kosher salt
  • ¼ tsp freshly ground pepper
  • 1 tbl olive oil

Ingredients:

  1. Mix all spices together in a bowl.
  2. Generously season both sides of fish with seasonings.
  3. Heat 1 tablespoon olive oil in frying pan over medium high heat. Once oil is hot, place seasoned fish in pan and sear for 4-6 minutes on each side, depending on thickness.
  4. Place cooked fish on a plate topped with two paper towels. This will help the oil absorb into the paper towel and out of the fish.
  5. Serve this delicious, spicy, and crispy fish inside your favorite taco shell or tortilla, top with fresh mango salsa (recipe below)
    and enjoy!

MANGO SALSA

Ingredients:

  • 1 cup small diced fresh mango
  • 1/4 cup minced red onion
  • ¼ cup rinsed and drained black beans
  • 1 tsp minced garlic
  • 1 TBL minced jalapeno
  • 1 TBL chopped parsley
  • 1 cup diced avocado
  • 2-3 limes, zested and juiced
  • 3 TBL fresh lime juice
  • 1 TBL olive oil
  • ½ tsp Kosher salt
  • ¼ tsp freshly ground pepper

Ingredients:

  1. Place mango, onion, garlic, and jalapeno in a bowl. Set aside.
  2. Emulsify 1 tsp lime zest, 3 TBL lime juice and 1 TBL olive oil in small bowl. Add diced avocados and toss.
  3. Add seasoned avocados and remaining juices to other ingredients. Toss to combine.
  4. Serve on top of fish and store extra covered in the refrigerator.
