DIRECTIONS:

  1. Make the rub and store in container until you are ready to use.
  2. Cover your tri-tip roast with rub and store sealed in the refrigerator for at least 3 hours.
  3. When ready to cook, leave seasoned tri-tip at room temperature for 30-60 minutes.
  4. COOK: Preheat your grill to high. Sear both sides of the roast on high heat for 10 minutes each. Turn the grill temperature down to low and slowly cook the roast until internal temperature reaches your desired doneness. (medium-rare: 120°F-125°F, medium: 130°F-135°F, medium-well: 140°F-145°F)
  5. Let the meat rest covered in tin foil for 10-15 minutes after you are done cooking. This will allow the juices to re-absorb and the meat to finish cooking.
  6. SLICE: Tri-tip roasts are best cut against the natural grain of the meat, and at an angle. Use a sharp knife to carefully saw back and forth
  7. SERVE: Once the meat is sliced and plated, pour all of the juice from your cutting board right on top of the meat. This adds even more flavor to an already intensely flavorful dish!

NOTE: You can even season your meat upon arrival home from the grocery store. Place seasoned meat in a sealed bag and store in the freezer until you are ready to use. Talk about making dinner easy!!
